Archive: Mexico Pocitos Size:12ozThis coffee comes from Pocitos, a 40 hectare farm in Cosautlan, Veracruz, belonging to the Valdivia family. Carlos, a fourth generation coffee farmer, is the estate manager. Carlos and the team hand pick the ripest coffee cherries and transport them to the mill, where they're floated to remove defects. The cherries are dried on raised beds for 20 30 days to a 10 11% moisture level. The result is a sweet, smooth cup with flavors that remind us of ripe
