We macerate the berries with fresh organic ginger root and dried cascara (cascara is the cherry like fruit that contains the coffee bean) for up to one week. Bright strawberry notes are complemented by roasted tamarind notes from the cascara. Delicious with all spirits, we especially enjoy this shrub with rum, tequila, and whiskey.
